- 1 small brown onion, peeled and diced
- 800g diced tomatoes, canned or fresh

- 150g dried beans (haricot, borlotti, or cannellini)
- 1 tbsp. oil of your choice
- Spices:
- 1 tsp. dried cumin
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- ½ tsp. dried cayenne pepper
- 1 tsp. tamari
- ½ tsp. sugar
- Salt & cracked black pepper, to taste
Instructions:
- Prepare the Beans: Soak the dried beans overnight, then drain and rinse. Add beans to boiling water and simmer for 1 to 3 hours, depending on the type.
- Cook the Onions: Heat oil in a pan over medium heat. Add diced onions and cook, stirring, until onions are translucent.
- Simmer the Tomatoes: Add the diced tomatoes to the onions and let them simmer for a few minutes.
- Add the Flavors: Incorporate the beans into the pan along with cumin, oregano, thyme, cayenne pepper, and tamari. Continue to simmer everything together for about 10 minutes.
- Season: Add sugar, salt, and freshly cracked black pepper to taste.
