Ingredients:

  • 12 medjool dates, pitted
  • 1 cup almond meal
  • ½ cup desiccated coconut (+ ⅓ cup extra for rolling)
  • ⅓ cup coconut oil
  • ⅓ cup cacao powder
  • 1 tbsp chia seeds

Optional add-ins:

  • A few drops of peppermint oil
  • Zest of lemon or orange

Method:

  1. Remove the pits from your dates and soak them in water for 1 hour to soften.
  2. Drain and blend all ingredients until the mixture is smooth and holds together.
  3. Let the mixture sit for 20 minutes to allow the chia seeds to soften and absorb moisture.
  4. Place the extra coconut in a shallow dish.
  5. Roll tablespoons of mixture into balls, then roll in the coconut to coat.
  6. Store in an airtight container in the fridge for up to a week – though they likely won’t last that long!

Bread and Food Waste – What You Should Know

Did you know that bread is one of the most commonly wasted food items in many households? Whether it’s due to overbuying, going stale too quickly, or being forgotten at the back of the fridge, bread waste adds up fast. Combat this by:

  • Slicing and freezing leftover bread to toast later
  • Storing in an airtight container in the fridge to extend freshness
  • Using stale bread to make breadcrumbs, croutons, or bread pudding
  • Baking smaller loaves, like this one, to match your needs

Homemade loaves like this buckwheat bread are not only delicious—they also help you reduce waste by letting you portion, store, and repurpose more mindfully.
