Buckwheat Sourdough Bread Recipe

Ingredients:

  • 300g buckwheat groats
  • 60g chia seeds
  • 2 tsp psyllium husks
  • 1 tsp fine salt
  • 1½ tsp baking powder
  • Sunflower, sesame, or pumpkin seeds (optional)

Method:

1️⃣ Place buckwheat in a large bowl and cover with plenty of water. Soak for 12–24 hours.

2️⃣ Drain the buckwheat and let sit for 5 minutes. Then, transfer to a blender with 250ml water and blend for 2–3 minutes until smooth.

3️⃣ Pour the blended mixture back into the bowl, cover, and let ferment at room temperature for another 12–18 hours.

4️⃣ Stir in the chia seeds, psyllium husks, salt, baking powder, and any optional seeds.

5️⃣ Pour the batter into a lined or greased loaf tin and bake at 190°C for approximately 60 minutes, or until the loaf is firm and golden.

6️⃣ Let cool completely before slicing. Store in an airtight container in the fridge for up to 5 days.
