Vegan Friendly Veggie Fritters

If you’re looking for a quick, delicious, and allergy-friendly meal or snack, these gluten free, dairy free vegan friendly veggie fritters are a must-try. Made with simple ingredients and packed with goodness, they’re a great way to use up extra zucchini and carrot in your fridge — and they’re ready in under 30 minutes!

This recipe is entirely plant-based thanks to the use of an egg replacer from Wasteless Pantry, making it perfect for vegans or those avoiding eggs due to allergies. Gluten free plain flour gives the fritters a satisfying crispness on the outside while keeping them light and tender inside. Serve them warm with a dollop of dairy free yoghurt, avocado, or your favourite dipping sauce.

Ingredients:

  • 1 carrot
  • 1 medium zucchini
  • 6g egg replacer
  • 1 tablespoon water
  • 50g gluten free plain flour
  • 2 tablespoons olive oil

Method:

  1. Grate the zucchini and carrot into a large bowl. Use your hands or a clean tea towel to squeeze out as much excess moisture as possible — this step is key for crispy fritters.
  2. In a small bowl, mix 6g of egg replacer with 1 tablespoon of water. Let it sit briefly to thicken, then add it to the grated vegetables.
  3. Stir in the gluten free plain flour until the mixture is well combined.
  4. Heat olive oil in a frying pan over medium heat.
  5. Shape the mixture into small patties and gently place them into the hot pan.
  6. Cook for a few minutes until golden on the bottom, then flip and cook the other side.
  7. Once both sides are golden brown, remove from the pan and let cool slightly before serving.

These fritters are ideal for lunchboxes, picnic spreads, or light dinners. Buy your egg replacer, gluten free flour, and unpackaged produce at Wasteless Pantry to keep your pantry (and the planet) waste-free!
